For the dough, mix 500 ml carrot juice with 500 g flour, two eggs and a pinch of salt.
Poach the dough in boiling salted water - the water should be just at boiling point, not at a full rolling boil. Fill a piping bag with the dough and snip off one corner. Squeeze the bag evenly and cut the dough off using a knife dipped frequently into hot water. Or you could use the time-honoured method of using a spoon to place the dough in the water.
For the sautéed vegetables, you might choose carrots and sweet peppers, for example, or any other kind of vegetable. Cut them up small and fry gently in herb-flavoured butter, then add the drained Kniddelen. Decorate the dish with fresh herbs.
