Honey-sweetened goat’s cheese

Wrap the goat’s cheese (125 g, in round slices) in bacon (4 slices). Fry on both sides in hot olive oil in a frying pan. Lower the heat; drizzle 1 teaspoon of honey over the cheese and let it melt gently. Wash and drain 100 g lamb’s lettuce.

For the vinaigrette, mix 1 tablespoon of mayonnaise, 1 teaspoon of semi-strong mustard, 1 teaspoon of honey, 2 tablespoons of apple vinegar, 2 tablespoons of apple juice and 2 tablespoons of olive oil, and season with salt and pepper. Add a splash of lemon juice to enhance the flavours. Don’t forget a drizzle of cream of balsamic vinegar on the plate when you serve.
