Smoked pork collar with broad beans and potatoes

Put the meat in a saucepan filled with cold water, and bring to the boil. Skim the surface. Add the chopped vegetables and the spices, and leave to simmer gently. Cooking time: 70 to 95 minutes, depending on the size of the piece of meat.

Cook the bacon snippets gently in butter and add the onion. Add the flour and cook until slightly coloured. Deglaze the pan with the stock from cooking the meat, whisking well. Add the broad beans and the savory, and leave to simmer gently until the beans are soft. Add a little cream, and season.

Peel the potatoes. Place them in lightly salted cold water and boil until tender.

2 kg smoked pork collar
100 g lean bacon snippets
1.5 kg broad beans
200 g onions
100 g chopped onion
200 g leeks
200 g carrots
100 g celery
2.5 kg potatoes (firm variety)
30 g butter
40 g flour
2 bay leaves    
1 sprig savory
salt and pepper
cream

Philosophy

An important aspect of the work at the Maison Relais Conter is not only the care but also the education of the children. "This includes, of course, education in healthy eating habits," says Tom Nero, the director of the house. "We invest a lot of time and effort in the kitchen in preparing the dishes with which we give the children a good basis as far as healthy eating is concerned." In this context, terms like Organic, Regional-Seasonal and Fairtrade have their place. "These are all building blocks of an education for a healthy and conscious eating behaviour," says Tom Nero. It also includes, for example, visits to the farm and other educational activities that are not limited to the consumption of food.

Chef Stefan Brückner says :

At the Maison Relais, we want the children to get to know the seasonal food and dishes that are typical for the region. We buy the foodstuffs locally because, due to the short distances, this has a positive impact on our environment. We buy as much as possible in the municipality, so we can support our local businesses and farmers.
